WEST LAFAYETTE, Ind. (AP) _ Researchers at Purdue University say they've found a way to improve the flavor and aroma of store-bought tomatoes that usually are picked before they are fully ripe.
The Journal & Courier reports the researchers have used metabolic engineering to change the fruit's genes so it produces large quantities of terpenes. That improves the taste, smell and pest-resistance of the plants.
The researchers emphasized the expression of certain genes to increase the production of a group of terpenes that determine plant characteristics, including taste, smell and pest resistance.
Biochemistry professor Natalia Dudareva says the findings could do more than improve the taste of fruits. She says the process also could be used to enhance fragrances and medications.
